We are as passionate about creating first-class craft beer, as we are at building a cool place to enjoy it.
That’s right, we are not a manufacturing plant, a board room, or a committee. From brewing our first batches in the garage of our share house, to carving out our niche in the hospitality industry - we are a small crew of real people with a shared love of crafting exceptionally wonderful beer.
And no-one likes to ‘beer’ alone, so we have gone and transformed a big ol workshop into a modern, breezy brewery so everyone can enjoy and ‘beer’ together. We strive to connect with all our ingredients, the land they were grown on, and the people that plant, pick, deliver and pour. Being the locals that we are, Precinct Brewing connects with our customers and community, to listen, empathise and celebrate.
Oh, and we are an optimistic team of ‘pint half-full’ kind of people. Our brewery is the place to ‘beer’ after all.

You are right, they are slightly less athletic than THE dream team, but they make up for it in unwavering enthusiasm. These bunch are the stokers of our dream.
Tom Welch
When he's not surfing, Tom is the numbers man. Don't ask him to spell, but when it comes to financials, it's Tom that keeps the kegs turning. Chartered Accountant and owner of local accounting firm TW Accounting, Tom takes the fun ideas like 'let’s build a brewery' and makes them work on paper. With a refined palate, he also fancies himself as 'head taste-tester' too.
Scott Imlach
In charge of Operations, Scott was told to stay away from construction as he has no idea about building. Scott will be in charge of running the venue and employing the right staff that know all about the beers. Scott was a keen home brewer back in his teens but brewed mainly rocket fuel and tried to sell it to his dad’s mates. I guess that’s where he got his business brains from.
Simone Tunbridge
Scott’s business partner in his stable of venues, Simone’s the brains behind them all. Scott comes up with the ideas and it’s up to Simone to pull everything together. She’s also an Accountant so will be responsible for the day to day office administration. Simone’s main challenge is to keep the peace between all the boys.
Michael Craighead
Michael is the mastermind behind the build and layout. He owns a shop fitting company called Coastline Builders. He’s managed to pull off a stroke of genius with a solid concrete front & back bar that holds four direct pour tanks. Michael has managed to nail the brief and build exactly the way we want it. Michael owns Nightjar, Nightcap and Mr. Hizola’s with Scott.
Jeremy James
Jeremy is the brains behind the Brewery and a mad scientist to boot! He lives and breathes brewing and comes up with heaps of beer ideas at both ends at the spectrum – some weird and some wonderful. Jeremy has been brewing with Stone and Wood for the past 4 years, so has learnt the trade from the very best. From their late teens, when Jeremy, Tom and crew started home brewing, Jeremy knew his passion was to become a brewer and one day own his own Brewery. That dream is now real!
